You will need

1.68 L All Purpose Flour

250 mL + 45 mL Sugar

30 mL + 3 ¾ mL Baking Powder

30 mL + 3 ¾ mL Baking Soda

3 ¾ mL Salt
-
375 mL Margarine
-
750 mL DOLE® Diced Peaches in Juice
-
375 mL Low-Fat Milk
-
15 mL Vanilla Extract
-
135 mL Chopped Almonds
-
7 ½ mL Ground Cinnamon

As needed for brushing Milk
Method
- Combine the flour, 1 cup sugar, baking powder, baking soda, and salt in a large bowl.
- Cut in the softened margarine until the mixture resembles coarse crumbs.
- Stir in the drained DOLE® Diced Peaches. Combine the milk and vanilla; stir into the peach mixture until a dough forms.
- Pat the dough o ½-inch (1.25 cm) thickness on a lightly floured surface. Cut into rounds with a 2 ½-inch biscuit cutter and place on baking sheets sprayed with cooking spray.
- Combine the optional chopped almonds, 3 Tbsp sugar, and cinnamon. Brush the tops with milk or cream and sprinkle with the cinnamon mixture.
- Bake at 400°F/204°C for approximately 15 minutes, or until lightly browned. Serve warm.
- Note For a batch this size, you'll likely need 3–4 full-size sheet pans, depending on the size and spacing of the scones.
