Breaded Haddock Loin on Greens with Asian Fruit Salsa

Crispy-coated haddock sits atop a bed of fresh greens, all brightened by a vibrant and refreshing Asian Fruit Salsa.

You will need

  • 4 Haddock Filets
  • 1 cup Seasoned Breadcrumbs
  • 1 tbsp Margarine
  • to taste Salt & Pepper
  • 2 cup Fruit Salad in Juice
  • 1/2 Red Bell Pepper, diced
  • 2 tbsp Cilantro, chopped
  • 2 tbsp Mint, chopped
  • 1 tbsp Sesame Oil
  • 2 tbsp Apple Cider Vinegar
  • optional Sesame Seeds, toasted

Method

  1. Preheat oven to 400 degrees
  2. Lay fish filets on a foil lined baking sheet
  3. Melt margarine over medium heat in a pan and add breadcrumbs, salt and pepper and stir until golden
  4. Portion breadcrumbs over fish and bake until fish reads 145 F
  5. Combine fruit, peppers, cilantro, mint, sesame oil, apple cider vinegar in a bowl
  6. Serve with a green salad
