Breaded Haddock Loin on Greens with Asian Fruit Salsa

You will need

4 Haddock Filets

1 cup Seasoned Breadcrumbs

1 tbsp Margarine

to taste Salt & Pepper

2 cup Fruit Salad in Juice

1/2 Red Bell Pepper, diced

2 tbsp Cilantro, chopped

2 tbsp Mint, chopped
-
1 tbsp Sesame Oil
-
2 tbsp Apple Cider Vinegar

optional Sesame Seeds, toasted
Method
- Preheat oven to 400 degrees
- Lay fish filets on a foil lined baking sheet
- Melt margarine over medium heat in a pan and add breadcrumbs, salt and pepper and stir until golden
- Portion breadcrumbs over fish and bake until fish reads 145 F
- Combine fruit, peppers, cilantro, mint, sesame oil, apple cider vinegar in a bowl
- Serve with a green salad
