Apple and Cottage Cheese Crepes

Indulge in a delightful twist on classic crepes! These delicate crepes are filled with a creamy cottage cheese mixture and topped with tender apples for a satisfying and healthy breakfast or light dessert.

You will need

  • 2.71 kg Cottage Cheese
  • 26 g Vanilla Extract
  • 70 g Sugar
  • 7.8 g Cinnamon
  • 85 g Margarine
  • 165 g Brown Sugar
  • 24 x 25 g Crepes, 6" Prepared

Method

  1. Open can of Dole Apple Slices in Water and drain discarding the liquid and set aside.
  2. Combine cottage cheese, vanilla, sugar, and cinnamon in a bowl for the crepe filling. Refrigerate until ready to assemble crepes.
  3. Melt the margarine and brown sugar in a rondeau or skillet over medium heat. Add the apple slices and cook stirring constantly until the sugar begins to caramelize, approximately 8-10 minutes. Remove from heat.

  4. Arrange crepes on serving plates. Portion 4oz/113g of crepe filling onto the middle of each crepe. Fold the sides over the filling and top with the warm apple mixture.
