Apple and Cottage Cheese Crepes

26 g Vanilla Extract

24 x 25 g Crepes, 6" Prepared
Method
- Open can of Dole Apple Slices in Water and drain discarding the liquid and set aside.
- Combine cottage cheese, vanilla, sugar, and cinnamon in a bowl for the crepe filling. Refrigerate until ready to assemble crepes.

Melt the margarine and brown sugar in a rondeau or skillet over medium heat. Add the apple slices and cook stirring constantly until the sugar begins to caramelize, approximately 8-10 minutes. Remove from heat.

- Arrange crepes on serving plates. Portion 4oz/113g of crepe filling onto the middle of each crepe. Fold the sides over the filling and top with the warm apple mixture.
