This Pear Upside-Down Cake features a golden brown caramelized pear topping nestled beneath a moist and flavorful cake.

  1. Open the can of Dole Pear Slices in Juice, drain and reserve 296ml/10oz of the juice. Measure out 850g/30oz approximately 48 each of the slices and set aside.
  2. Preheat convection oven to 150°C/300°F
  3. Melt margarine in a pan and add brown sugar and cinnamon. Add the pear slices and stir, fully coating the pear slices with the sugar mixture. Evenly spread the pear mixture onto a greased 18x13 sheet pan and set aside.
  4. Add the cold water and the cake mix to a planetary mixer with the paddle attachment and mix on low speed for 2 minutes. Stop mixer and scrape down the bowl and the paddle. Add the juice and mix for 30 seconds. Stop the mixer and scrape down the bowl. Mix for an additional 2 minutes.
  5. Spread cake batter over pear mixture and bake in a 150°C/300°F convection oven for 25 to 30 minutes.

  6. Chill cake to 4°C/40°F before cutting and serving.
